Through processing, fruits can improve their flavor, enhance their edible value and economic benefits, and effectively extend their supply period.

Fruit processing equipment uses fruits and berries as raw materials, which are processed using physical, chemical, or biological methods (such as inhibiting enzyme activity and the growth of spoilage bacteria or killing spoilage bacteria) to produce food products for preservation purposes. Through processing, fruits can improve their flavor, enhance their edible value and economic benefits, and effectively extend their supply period. Common fruit processing methods include direct dehydration (drying), sugar preservation (pickling fruits in sugar), canning (processing fruits into canned products), quick-freezing (freezing fruits at low temperatures), and fermentation (fermenting fruits). These methods produce corresponding dried products, sugar-preserved products, canned products, frozen products, and fermented products.

The selection of fruit processing raw materials is based on factors such as yield, supply period, storage period, proportion of edible parts, physical properties, chemical composition, and sensory quality. The tissue structure and chemical composition of fruits depend on the variety and maturity of the raw materials. The productivity, processing adaptability, and harvest period of fruits are directly related to the variety. Generally, processing raw materials should have good fruit texture, normal flavor, a high proportion of edible parts, appropriate size, and moderate maturity. Different processing methods and purposes have different requirements for raw materials. For example, when producing sugar-water fruit canned goods, it is advisable to select fresh, high-quality fruits with an appropriate sugar-to-acid ratio, thick flesh, a dense and delicate texture, and the ability to withstand heat treatment. The maturity level should be slightly lower than that for fresh consumption (approximately 8–9 maturity). For making fruit juice and fruit wine, it is advisable to select raw materials with abundant juice, appropriate sweetness and acidity, and a rich aroma. Varieties such as snow oranges, Jin oranges, Fulingxia oranges, Kangke grapes, and soluble peaches can be used to make juice; red oranges, mandarins, sweet oranges, grapes, hawthorns, etc., can be used to make fruit wine. Raw materials for jam production should have high pectin and fruit acid content, with vibrant colors, such as apricots, hawthorns, citrus fruits, apples, etc. For producing dried fruits and candied fruits, it is important to select fruits with low moisture content, high sugar content, tender texture, thick flesh, small seeds, low fiber content, good storage and transportation tolerance, and heat resistance. Fruits used for freezing should have high adaptability to freezing storage, as well as distinctive flavor and color.
